Butter Tarts and Jamaican Rum Cake

My thoughts:
My friend, who is quite an avid baker (and cook), made these to give away for Christmas, and I was lucky enough to receive some. 

I like nuts and raisins in my butter tarts, which were absent in these tarts, but they were still very good. The pastry was flaky, akin to an old-fashioned pie crust and the filling gooey and perfectly sweet.

The rum cake, I was told, took a year to prepare. It is prepared from fruits soaked in rum for a year, which really brings out a much richer and deeper flavour (and colour). The fruits are pureed, and even more rum is added to the batter. All that rum acts as a preservative, and I understand that this cake can keep for quite some time, even at room temperature!
